Equipment:
- Immersion blender
- Deep mixing bowl (at least 2 liters)
- Small bowl for cracking eggs
- Two measuring cups
- Baking pans (I use two aluminum pans, 17 × 26 cm)
- Parchment paper (or butter and flour/breadcrumbs for greasing)
- Wooden skewers (to test doneness)
- Two linen towels (for turning the cakes).
Ingredients:
- 7–8 eggs
- 4 medium apples (about 800 g), finely chopped
- 600 ml granulated sugar
- 600 ml sifted wheat flour
Optional: lemon juice, cinnamon.
Instructions:
1. Preheat oven to 395°F (200°C).
2. Whip eggs until doubled in volume.
3. Gradually add sugar, then gently mix in flour.
4. Fold batter into finely chopped apples.
5. Pour into lined pans (17 × 26 cm).
6. Bake 35–45 minutes.
7. Cool on linen towels before serving.
