Ingredients:
- 1,200 ml water
- 1 pear, diced (no need to peel)
- 200 gr sea buckthorn berries
- 1–2 cinnamon sticks
- 1 star anise
- 5 gr loose-leaf Assam black tea
- Honey, to taste
Instructions:
- Bring the water to a boil with the cinnamon sticks.
- Add the sea buckthorn berries and diced pear. Simmer gently for 8–10 minutes.
- Add the star anise and simmer for another 1 minute.
- Remove the cinnamon and star anise and place them into a teapot.
- Add the Assam black tea and brew for 2–3 minutes.-
- Strain the hot fruit mixture into the teapot, gently pressing the fruit to extract flavour.
- Sweeten with honey to taste and serve hot.
Notes: Any good-quality Assam black tea works well for this recipe. We use our loose-leaf Assam from GY Tea for a rich, balanced base.
